Goat cheese and leek quiche
Ingrédients :
1 shortcrust pastry
3 eggs (beaten)
2 leeks
50g butter (melted)
20ml heavy cream
emmental (grated)
goat cheese (5 big slices)
salt, pepper
Preheat your oven to 200°C (gas mark 6-7).
Rinse the leeks carefully and slice them in half lengthwise and crosswise. Add the leeks to the melted butter and a little water. Salt. Simmer 10 minutes.
During this time, mix the eggs, cream, salt and pepper together.
Spread the pastry in the pie tin. Prick pie shell all over with a fork. Add the leeks and the emmental cheese. Pour the egg mixture over them. Finally, add the goat cheese.
Bake for 20 mn.
