Vegetable & beef Samosas
Ingredients :
Stuffing :
3 potatoes ( if you want to make vegetable samosas) or 500g ground beef (for beef samosas)
2 onions
4 fistfuls green peas
salt, pepper, coriander powder & garam masala
oil
Beef samosas : Heat the oil for the stuffing and add the chopped onions. When they are fried, add the ground beef and let it brown at medium heat. Add the green peas (cooked in boiling water for 10 minutes) and all the spicies and mix well. Set aside.
Vegetable samosas : Mix the mashed potatoes, green peas and spices together with the fried onions. Set aside.
mint chutney :
mint leaves (washed and reduced with the help of a pestle and a mortar)
1 yogurt
1 pinch pomegranate seeds in powder
(en français, ce sont des grains de grenade séchés qui sont réduits en poudre. Au cas où vous n'en trouvez pas sous cette forme, vous pouvez toujours les réduire vous même au mortier ou ne pas en mettre du tout !)

Mix well all the ingredients and spice at taste.
dough :
300g flour
150g butter (melted and cold)
1/2 bowl water
Mix the flour and the melted butter together. Salt to taste. Add enough water and knead the dough. Set aside for about 10 minutes. Divide the dough into 16 round portions.
Take each portion and coat it with some flour so that it does not stick to your hands. Roll it into a round. If the round isn't perfect, use a bowl and cut the excess. Garnish with the mixture (about two tablespoons) in the shape of an equilateral triangle and close the first side with the help of a flour and cold water mix. Repeat the operation until the samosa is closed.
Repeat for the rest of the dough. Deep fry in oil till golden brown and serve with mint chutney.

Gulab Jamun
Ingredients : (for ten)
1 cup milk powder
1/4 cup flour
30g butter
1/4 cup milk (warm)
1/4 bag baking powder
2 cup sugar
2 cup water
4 cardamom seeds
oil
coconut powder
In a bowl, mix milk powder, flour and baking soda together. Add the butter and mix well. Then, add milk to make soft dough. Let it sit for a few minutes. Knead the dough. Divide the dough into about 10 portions and roll them into round balls with your hands.
Heat the oil in a frying pan on medium heat. Place the gulab Jamuns into it. Fry until the gulab jamuns become dark brown on each side (about 7 minutes).
Syrup :
Just mix water, sugar, and cardamom seeds together and bring it to a boil for a minute then remove it from heat. Place the gulab jamun in the hot syrup for 15 minutes and decorate with coconut powder. Refrigerate.

Ingredients : (for 10)
500 ml milk
2 bags vanilla sugar
4 egg yolks
100g sugar
60g cornstarch
2 sheets puff pastry
chocolate chips
icing sugar
Crème pâtissière (Pastry cream) :
Bring the milk and the vanilla sugar to a boil in a saucepan. While the milk is heating, in a separate bowl, mix together the cornstarch, the sugar and 3 egg yolks.
Pour the milk in the yolk mixture over mixing vigorously. Boil for 40 seconds, stirring constantly.
When the mixture is thick, remove from heat. Refrigerate.
Remove the puff pastry from the fridge. Cut 10 strips. Add the cream and the chocolate chips at the centre of each strip.
Fold the 1st third of the strip on the cream. Beat the remaining egg yolk with a little water and lightly brush the top.
Close with the other side and brush onto the top with the egg.
Let rest a few minutes and bake at 200°C (gas mark 7) for 20 minutes in the preheated oven. To finish, sprinkle with icing sugar.

Chocolate chips muffins
Ingredients : (for 6)
180g flour
80g sugar
40g butter (melted)
1 egg (beaten)
1 teaspoon baking powder
60 ml milk
chocolate chips
Preheat your oven to 180°C (gas mark 6).
In a bowl, beat the egg, butter and milk together.
In another large bowl, mix the flour, baking powder and sugar.
Add the liquid mix to the dry, and mix. Don't forget the chocolate chips !
Spread the preparation in the muffin cups of a silicone tray. Bake for 20 minutes.
